Announcing! The Resolution. 
Light and simple meals for the New Year.
We're excited to announce a new FoodWorks option, The Resolution. It features meals with servings around 400 calories each, with lots of veggies, whole grains and only a little salt.
Enjoy delicious, refreshing, light and healthy meals made with local, sustainably grown  ingredients, including grassfed meats. As always, we can do vegetarian, vegan, and gluten-free meals, too.* And now you can get food in single servings. (Or as many servings as you want.)

Meals like:
  • Chicken, mushroom and wild rice casserole
  • Moroccan chickpeas and meatballs with couscous
  • Beef and black bean chilaquiles casserole
  • Grits and greens with smoked ham
  • Swiss chard with shiitake mushroom  frittata
  • Mashed sweet potato and kale gratin with smoked gouda and shallots
  • Winter squash gratin with poblano peppers
  • Mixed greens with shredded beef, chickpeas, scallions and feta
  • Horseradish scalloped potatoes with collards and ham
  • Spicy tofu casserole with pork
  • Chicken cassoulet with fennel and sausage
  • Potato and leek gratin
  • Tomato, eggplant and zucchini casserole with toasted crumbs


$6.50 per serving. Get just what you need. 

How it works:
We set you up with an appropriately sized casserole dish. A real, ceramic, oven- and microwave-friendly casserole dish. Then we make meals to fit your dish, freeze them, shrink wrap them for freshness, and deliver them to you. All you have to do is pop them into your dish, thaw them out** and reheat them. 

There’s an initial start-up fee of $10*** plus your first month of meals. Get all different meals or as many servings of the same dish as you want.

*We can’t accommodate extremely allergic individuals: our facility does contain gluten products and we can’t guarantee absolute purity.

**We recommend thawing overnight in the ‘fridge before cooking for best results, but you can always pop it right into the oven direct from the freezer. Just try to cook it at a lower temp until it’s thawed, and then take the heat up to the recommended temp to finish it until it’s bubbly and golden.    

***If you want to have two sizes of casseroles (for instance, maybe you want some single servings for lunch, plus once a month you want a casserole dinner for the whole family), then there’s an additional charge for extra dishes. Or you could get your family-sized casserole in an aluminum foil pan for no extra charge.But we want to point out that some customers have had trouble with the foil pans getting banged up in the freezer.



NEW! The Comfort Food Casserole, Resolution Meals and Pasta-Vore can now be purchased in individual portions, without a subscription, and are delivered monthly.

Comfort Food Casserole
The Comfort Food Casserole subscription is our most popular option and includes monthly delivery of delicious creamy, cheesy casseroles with a dessert to accompany the meal. It's a great bargain, and a lot of fun. Schedule a carefree dinner with the fam' or a couple of friends, toss a salad, and you're good to go.

The casseroles arrive frozen, (either par-cooked or fully cooked) and ready to reheat. So they're ready for you to pop into the oven whenever you need an easy, but wholesome and locally sourced dinner. Cookies and cakes are frozen, and can simply be thawed at room temperature. Thawing and cooking directions are included. You may substitute frozen vegetable sides or bread for the dessert, or add them to your order for an additional charge if you'd rather. Vegetarian and carnivorous options are available. Please specify.

Casseroles we've served in the past include:
  • Tex Mex Creamy Cheesy Ancho Chicken with brown rice
  • Lasagna with spinach, ground beef and four cheeses
  • Beef and mushroom strogonof
  • Winter squash and onion pudding with shredded beef and pepperjack
  • Scalloped potatoes with ham
  • Fresh corn tomale with spicy tomato sauce and cheese
  • Ratatouille chicken with mozzarella
  • Pork chili with cornmeal dumplings
  • Moroccan chickpea, vegetable and chicken stew with lentils
  • Whole wheat egg noodles with chicken ragu and parmesan bread crumbs
  • Corn and poblano casserole with roasted pork
  • Beef burgundy with potatoes and carrots
  • Chorizo tomato pie
  • Rabbit and vegetable stew with dumplings
  • Lamb asparagus crepes with parmesan and cream sauce ...
$7.50 per serving ($6.50 without dessert or other sides). Minimum order 8 servings (servings can be all different, all the same or anything in between).

PastaVore 

Delivered monthly, frozen, ready to reheat. Order as many units as you want per delivery.

  • One big serving of homemade pasta with sauce
  • Dinner rolls
Most pasta dinners are stuffed pastas like raviolis, or lasagnas. Occasionally it will be noodles with a chunky sauce. Vegetarian and carnivorous options are available. Please specify.
$10 per serving. Minimum order 3 servings (servings can be all different, all the same or anything in between).

Do you miss Chez Burgers?

How would you like for us to come to your house and make you Chez Burgers? Have a burger party! GIVE a burger party to your favorite Chez Burger fan. 

Yup. That's right. Burgers; all your old favorites (the Conflicted Hippie, the Chez Supreme, the LaFollette, etc...) or something new, whatever you want, with a couple of sides. Homemade pie for dessert, if you want. We might even bring along a sarcastic waitress. Prices start at $15 per person. 


Details. Here are the details.

  • Burgers with two sides of your choice (sky's the limit, really. French fries? Potato salad? Green salad? Soup? Bean salad? Sweet potato pancakes? You tell us. What do you have a hankering for?) All burgers are made with locally grown grassfed beef, from either Dry Barn Meats or Painted Rock Farm, served on our homemade challah buns with your choice of toppings.  Starts at $15 per person. (And yes, we can do veggie burgers too.)
  • Pie for dessert? (whole pies only) Start at $15.
  • Snarky waitress/bartender starts at $50.
  • Minimum order $100, not including snarky waitress.
  • Will happily travel within the greater Waupaca, Stevens Point area. And further with additional charge. 

Terms: 50% down, 50% the day of the show.


FoodWorks Subscriptions

 A subscription with us ensures that our choice of the most wonderful foods being produced in Central Wisconsin will land in your kitchen once a month.

Each month's basket includes not only the great foods available to you at the farm market or directly from local farms, but also features sauces and other accompaniments specially selected to enhance the season's bounty. And each collection includes helpful recipes selected from traditional world cuisines, featuring the ingredients in that month's basket.

Choose from six models: Carnivore, Pasta-vore,  Epicurean, Nose to Tail, and Meal Delivery.  (And yes, you may mix and match. Just let us know what you have in mind.)





Carnivore:
Cuts of local grassfed beef, pork, rabbit, chicken, goat, lamb and duck, and Lake Superior fish, with accompaniments and recipes.* (Or, if you'd rather, we can just bring you a selection of meat without any sides. See below for details.) Our suppliers are either certified organic or employ organic methods. Many raise heritage breed animals, ensuring that valuable biological diversity is preserved. See below for a full list of the farms we buy from.

For example, a typical box might include:
  • 4 to 6 lamb chops
  • four chicken breasts
  • One 3-lb (approximately) beef roast
  • 1 lb. Lake Superior whitefish
  • 1 Peperone stick from Underground Meats 
  • 1 pint Shiitake mushroom gravy (frozen)
  • 1 half-pint fresh herb and garlic marinade (frozen)
  • 1 pint BBQ sauce (made with local tomatoes, crabapple vinegar, and honey)
  • 1 pint mint/wine jelly
  • plus serving suggestions and recipes with sourcing information.

Or it might have:
  • 2 beef ribeye steaks
  • 2 lbs rabbit sausages with ginger and cilantro
  • 2 duck breasts
  • 2 thickcut pork chops
  • 1 lb. beef stew meat
  • 1 half-pint freshly grated horseradish sauce
  • 1 pint cherry/porter sauce or 1 pint knotweed and rhubarb sauce
  • 1 pint mushroom and shallot gravy (frozen)
  •  plus serving suggestions and recipes with sourcing information.
And the "just meat" box might have:
  • 2 Porterhouse steaks
  • 1 Chuck roast
  • 2 lbs hamburger
  • 2 lamb shanks
  • 1 whole chicken (roaster)
  • 4 pork chops (in two packages)
  • 1 lb bacon or sausage

* All meats are delivered frozen.






Vegetarian:
This basket is intended to help us eat locally even when the farm market is gone, or grown sparse. Basically, we fill big freezers so you that don't have to. Our farm suppliers are either certified organic or employ organic methods. Many raise heirloom varieties, ensuring that valuable biological diversity is preserved. See below for a full list of our partner farms.

For example, a single basket may include all of the following:
  • 1/4 lb of dried shiitakes 
  • 1 lb dried locally grown heirloom variety beans or legumes (pinto, black turtle, cannellini, french green lentils, etc.)
  • 3 quarts of canned tomatoes
  • 1 pint of tomato sauce with herbs
  • 1 pint pickled asparagus
  • 1 qt. frozen broccoli
  • 3 qts. frozen green beans
  • 1 pint frozen chopped bell peppers
  • 2 quarts of frozen corn
  • 1 quart ratatouille
  • 2 pints of frozen greens (spinach, chard, kale, escarole, endive, etc.)
  • 1 half-pint of assorted pestos (frozen)
  • 1 quart of Brandywine bloody mary mix
  • 2 pints of canned or frozen berries
  • 1/2 lb Wisconsin wild rice
  • plus serving suggestions and recipes with sourcing information.

It might include some honey, or maple syrup, pickled brussel sprouts, or sauerkraut, or a pot of fresh herbs for your kitchen window, or popcorn, or cornmeal, or flour ... you get the idea... but primarily it's meant to provide you with locally grown vegetables that were preserved in season.  

Epicurian: 
The Epicurian includes a coordinated mix of any of the above, plus specialty items.

For instance, your basket may include:
  • Two ribeye steaks
  • Four marinated chicken breasts
  • 2 lbs Lake Superior whitefish
  • 1 qt of frozen green beans
  • 1 qt. blanched and frozen broccoli
  • 2 pints frozen greens (spinach, escarole, kale, swiss chard, etc.)
  • 1 pint shiitake gravy (frozen)
  • 1 qt canned fire-roasted tomatoes
  • 1 pint frozen berries
  • 1 pint wildflower honey
  • Goat cheese or cave-aged cheddar
  • 1/2 pound of Wisconsin wild rice
  • 1 qt. Brandywine bloody mary mix or tomato juice
  • plus serving suggestions and recipes with sourcing information.

Nose to Tail:
 Life isn't just about boneless chops and chicken breasts. Our Nose to Tail box includes the lesser-known cuts of meat with selected accompaniments and complete instructions on how to prepare them.

For instance, a box might include:
  • A beef tongue with a jar of our salsa and a recipe for beef tongue tacos.
  • Lamb shanks with mixed herb pesto, garlic, and full cooking instructions.
  • Pork livers with fresh mustard and horseradish relish. 
  • Rabbit livers, salted nasturtium buds, and instructions to make pate.
  • Pork belly, brine mix, and instructions to make bacon.
  • Duck breast and instructions to make pastrami
  • Chicken and duck gizzards, our jarred preserved tomatoes, herb mix, and instructions for making ragout

Meals at Home Delivery:
 We can, under certain circumstances, deliver fully cooked, ready to reheat meals, fresh, to your door. Some customers get meals cooked in their homes. Many have from one to four meals delivered once or  twice a week. It's a very convenient service for shut-ins, for people recuperating, for people who just don't or can't cook for any reason at all, and (not least) for a treat. Contact us for more information. Cost for this subscription varies.

We want you to be happy with whichever subscription you choose, and can accommodate most taste preferences (no pork? no mushrooms? no broccoli? no problem), but we are unable to ensure the safety of anyone with food allergies. Our facility processes nuts, soy, gluten flours, fish, and other known and unknown allergens. 

Our 2014/2015 season starts December 10th.

Please note that we employ the CSA subscription model.  This ensures that we and the farmers that we buy from have a base income that we can depend on. It also allows us to plan our crops, herds and production in accord with demand and minimizes risk and waste. Your first installment payment covers our cost of investment in producing food for you. Subsequent payments cover ongoing expenses, transportation and delivery of goods, and provides us with our income.

If you subscribe, you'll be playing a valuable part in supporting local food systems, and you'll be eating some of the best food in the region. The terroir of Wisconsin is increasingly well recognized for its excellence and we feel very privileged to be able to work with such high quality product.

You may purchase either a four- or eight-month subscription, and you may pay all at once or in installments. 
Select the plan that works best for you.For all of the above plans with the exception of the Meal Delivery subscription the costs are as follows:

Sixteen week subscription:
Payment in full/one payment:  $400
or
Installment of $200 down and $75 per month for each of the subsequent three months

32 week subscription:
Payment in full/one payment: $800
Installment payment options:
-- two payments of $425, one up front and the other at midpoint.
-- or $225 up front and seven payments of $92.50 for each of the subsequent seven months.

Delivery is once monthly, either directly to your home (in the cities of Waupaca, Amherst, Stevens Point and Appleton), and to drop-spots as yet to be determined.

Our farm suppliers:
The Smallest Farm, Waupaca. This is our own farm, where we grow rabbits, chickens, quail, and assorted fruits and vegetables on a very small scale. We currently have our own heritage breed rabbit meat available -- contact us for details.
